Ingredients



  • 500g lean lamb cubed
  • 1kg potatoes thinly sliced
  • 2 onions sliced
  • 4 medium carrots sliced
  • Mixed herbs
  • Freshly ground pepper
  • 2 cups of stock

Method



  • Remove all visible fat from lamb
  • Line the bottom of a camp oven with a layer of potatoes
  • Add layer of onions, then carrots, then lamb
  • Continue layering, seasoning each layer with a pinch of mixed herbs and pepper
  • End with layer of potatoes
  • Pour in the stock and bring rapidly to the boil
  • On low heat, cover and simmer gently until meat is tender, approximately 2 hours.
    Delicious with dumplings
