| Ingredients
- 500g lean lamb cubed
- 1kg potatoes thinly sliced
- 2 onions sliced
- 4 medium carrots sliced
- Mixed herbs
- Freshly ground pepper
- 2 cups of stock
Method
- Remove all visible fat from lamb
- Line the bottom of a camp oven with a layer of potatoes
- Add layer of onions, then carrots, then lamb
- Continue layering, seasoning each layer with a pinch of mixed herbs and pepper
- End with layer of potatoes
- Pour in the stock and bring rapidly to the boil
- On low heat, cover and simmer gently until meat is tender, approximately 2 hours.
Delicious with dumplings
