BBQ PORK STRIPS & TASTY POTATO WEDGES
Cut the peeled potatoes into wedges. Place wedges into a strong plastic bag, add 2-3 tbs of olive oil and a good sprinkle each of garlic powder, season salt and smoked paprika(or whatever spices u like to add)
Slice pork into strips
Shake plastic bag gently to coat all the wedges with the oil and spices, then spread them out in the camp oven which has been lined with baking paper. Slice 2-3 onions and drizzle with olive oil. Season pork strips with seasoning of your choice and pour over 1-2 tbs olive oil, mixing gently so all the meat is coated.
Set the camp oven with the wedges in it onto the coals and add coals on top of camp oven. Cook pork strips and onions on the sizzling hot bbq to brown. Turn pork over and repeat.
The wedges are ready when crispy on the outside and soft in the centre
